Crab Cakes: How to Make the Best Ones

Author: Michele Robichaux

Crab cakes are a popular dish along many of the coastal areas in the United States. This is, of course, in part because crab is easily available in these regions. Although people from most of the coastal regions of the United States enjoy eating crab cakes, crab cake recipes differ greatly among these various regions. The most noticeable difference between the recipes is generally the type of crab used. One of the coastal regions most widely associated with crab cakes is the Chesapeake Bay area, specifically Maryland. People from this region generally

use blue crab meat which is considered by many to be the best tasting crab. Blue crab is easy for people from this region to use, because the crab is native to their area. While many people in the Pacific Northwest and Northern California will use Dugeness crab in their crab cake recipe, as Dungeness crab is native to the Pacific coast.

Basic crab cake recipes include: crab meat, bread crumbs, milk, eggs, and seasoning. Onions, green peppers, and red peppers are also often used in crab cake recipes. Of course, you can always find a crab cake recipe that might call for a more unique spin on the recipe. For example, a crab cake recipe from a more southern state may call for jalapeno peppers.  Other recipes call for things like wild rice, Worcestershire sauce, hot sauce, or even cream cheese.

When making a crab cake it is important that you have the right type of crab. Most recipes are going to call for lump crabmeat. The freshest type of lump crabmeat generally comes packaged in a tub. If you can find it, this is the type of crabmeat you will want to use. If you are unable to find tubs of lump crabmeat, canned crabmeat will work for most recipes. Often this crabmeat will already be cooked, making the process of making your crab cakes a little easier.

Cooking and preparation times for your crab cakes will depend upon your crab cake recipe and how you are cooking your crab cakes. Some recipes will have you mix the crab cake and then store it overnight or for a certain period of time. Others will have you mix the crab cakes, and then cook them right away. When cooking a crab cake on your stove, after shaping it into a patty, you will generally cook it for about four minutes on each side. You will know that itís done when it is crisp and golden brown on both sides. If you are baking your crab cakes, you will probably be cooking them at 400 for anywhere from 15 to 20 minutes.  With baked, you will also want them to be crisp and baked all the way through before you try to eat them. Your crab cake recipe may also call for your crab cakes to be deep-fried. If this is the case, expect them to take roughly five to seven minutes to cook. You will know that your crab cakes are done when they start to float, and they look crispy. Most recipes will tell you to serve them warm. The best crab cakes should be moist and yet crispy. Even if you have added a bunch of other ingredients, they should be a meaty dish. Depending upon the crab cake recipe, you might have a spicy dish, a dish that is mainly just a warm patty of crab, or you might have another type of crab cake.
